Seafood: An Easy and Tasty Way to Freshen Up Your Spring Menu

INGREDIENTS:

1 package (9-ounce) SeaPak® Jumbo Butterfly Shrimp

1 baguette

3 garlic cloves

6 tablespoons olive oil, divided

3 cups grape or cherry tomatoes, seeded and finely diced

1/3 cup chopped basil, plus more basil leaves for garnish

Salt and pepper to taste

INSTRUCTIONS:

Prepare butterfly shrimp according to package instructions and keep warm.

Slice baguette into as many slices as you have pieces of shrimp. Use one of the garlic cloves to rub over one side of each slice of bread. Brush the garlic-rubbed sides with olive oil. Set all the baguette slices aside.

Finely dice remaining garlic.

In medium mixing bowl, stir together the diced tomatoes, 3 tablespoons of the olive oil, the chopped basil and the remaining diced garlic. Salt and pepper to taste and set this tomato mixture aside.

Working in batches, place the baguette slices (oiled side down) on a large, hot skillet and cook until browned around the edges. Remove baguette slices from pan.

To serve: Top each baguette slice with a small spoonful of the tomato mixture and a piece of shrimp. Garnish each finished slice with a basil leaf. Serve immediately.
