The co-owners of Castro jewelry shop D&H Sustainable Jewelers, Lindsay Daunell and Shawn Higgins, recently added a new facet to their established place of business — a wine bar. Rose Cut Wine Bar is located atop the jewelry gallery and features wines from environmentally conscious vineyards.

What makes this wine bar different? It’s the only wine bar to be located in a retail jewelry store. We really only focus on one vineyard at a time. We like to really give our clients a lot of knowledge about the vineyards that are doing environmentally conscious and sustainable methods of production in the wine industry. It’s also our intention to bring in those winemakers to host special wine tastings.

How was this idea born? We both come from the jewelry industry and we knew we wanted to open up a jewelry store. We wanted to do something different.

You guys are all about helping the environment. Are you currently featuring a vineyard that does that? The vineyard that we’re carrying right now, Tolosa ... they have a completely solar-powered operation.
